A vibrant, flavour-packed open sandwich featuring our Holy Avocado chunky pulp. Ideal for brunch, lunch or a light dinner.
Ingredients (for 1 serving):
Holy Avocado chunky pulp
1 slice of sourdough or multigrain bread
2 cherry tomatoes, halved
2–3 slices of radish
1 tbsp cottage cheese
A few slices of pickled red onion
½ tbsp fresh chives, chopped
A few sprigs of parsley or cress
1 tbsp beetroot hummus
Instructions:
Toast the bread until golden and crisp.
Generously spread the Holy Avocado Chunky Pulp over the toast.
Add cottage cheese, cherry tomatoes, radish, and those tangy pickled onions. Finish with chives and fresh herbs.
A spoonful of beetroot hummus on the side for that colour pop (and flavour boost).
